We make amazing bread!

Let’s just start out by saying, AtuVava bread is amazing. Really. Our bread is a labor of love… literally years of trial and error, years of trying different types of grain and sources/producers of materials… years of testing (definitely failing sometimes) on ratio of water and fat and all those other factors… trying to get as close as possible to that amazing bread we used to bake pre-celiac.

The answer is, we got there! Not to brag - tho I will - our bread SLAYS! All of it. And we have developed a quiet little following of dedicated weekly or bi-weekly customers. Now we’re broadening our project and making AtuVava Gluten Free bread available to more people/families.

Although the test-kitchen is always hard at work, we can offer four standard breads at this time… let’s introduce them:

The Seeded Loaf

This sandwich loaf has a soft texture, but a nutty, wholegrain feel. We combine Sesame, Sunflower, flax and pumpkin seeds with buckwheat groats and gluten free oats - soak and dehydrate the seeds, then grind it all into a flour. This flour combines with our own light bread flour to create a toasty, satisfying slice of bread suitable for sandwiches or morning toast!

Rustic White Sandwich Loaf

This is your basic (not so basic) gluten free white sandwich loaf. If you have a finicky eater who isn’t interersted in “anything funny” in their sandwich bread, this is the ticket. It sports a delightful crust, with a soft, tender crumb.

Honey Hempseed

The Honey Hempseed is a step between our Rustic White and the Seeded Loaf… it has a sweet, nutty flair, but not quite as fiber-rich as the seeded loaf.

Rustic White Boule

This is the loaf you’re going to want when you serve a cheese plate or your charcuterie board. Light and soft on the inside with an intense, caramelized crust that brings you back to those loaves you grab at the corner bakery. High heat and baked on stone recreates that rustic feel. It’s really good ;)

Welcome to AtuVava

First, thanks for visiting AtuVava. Hopefully you will find something that engages you, inspires you and, perhaps, makes you want to come back.

AtuVava is an intentional endeavor. At first glance it is obviously a business dedicated to making amazing gluten free food. You could order bread or cookies or scones or cake for an event... you could receive raves on how awesome the food is, and hear "are you certain it's gluten free?" (yes).

But there is also a philosophy behind AtuVava. It is a philosophy that sharing is better than hoarding. That taking a chance and reaching-out often opens a door that we hadn’t seen before. That philosophy extends to the greater belief that we are all interconnected, whether we like it or not. You have an impact at every turn in your life - large and small. That is powerful. Our business is built with intention and noting the impact we have and can share.

What is this...? perhaps the first strawberries of spring?

Atuvava - What's up with the name? How do you say it? What does it mean?

Phonetically - "ah-too-va-va"

This is literally from the mouths of babes. One adorable babe, in fact. When my daughter was just learning language, we utilized every one of her sweet little word-creations...many we still use to this day ("Dup" is yes). Vava was food. Imaging the fast-growing, notoriously hungry, urgent toddler bleating "Vava...Vava...VAVA!" It tends to stick.

At some point she started to modify “vava” with atuvava. AtuVava was an offer of food or a request for food... sort of "do you want to share this?" or "can I have some of that?" Charmingly, our little ambassador would "AtuVava" anyone: guests at the house, shoppers at the coop, walking through the park... Honestly, I cannot recount how many times this happened. once she approached a grandma who was sitting on a bench at the playground -- this grandma was a somali woman who had limited, if any, english language skills..."Atuvava?" says the little cherub... And she was met with the sweetest, biggest, lovingest smile, because that grandma totally got what she was saying. today I cannot remember whether she was asking for or offering food... I just remember the awesome connection.

So AtuVava is about generosity and thoughtfulness. It's about remembering that there is always enough and that everybody is welcome. It's about taking chances and being strong and being inclusive and helping without waiting to be asked. AtuVava is about being brave enough to care about others.

And, of course, it's about food.

So striking a balance is key, right? Here is our proposal: this blog will contain some amazing photos of killer food… It’ll also share thoughts on where food comes from and the impact of our choices. Missives, rants, encouragement, resources and all other things related to various social concerns….that’s the goal ;)

But in the end, we are a business, and we hope you will become a valued customer of AtuVava. We hope you will see the value in what we are doing, but if you’re just here for the “our of this world, delicious” Nom-Nom, we say Welcome!
