time and again, when people try an atuvava gf cake, invariably there are gasps of “how did you do this?” and “this cake is amazing!” and any other *astonished* kind of reaction.
the fact is, I can make a killer cake because my child was eight years old when she was diagnosed with celiac disease and there was no way in hell i was going to let her be “the kid who can’t have cake” at events… particularly birthday parties. and i wasn’t satisfied to only make a cake to serve at her birthday… I wanted to bake a cake that was good enough to feed everyone. a cake that would pass a not only edible/passable - no, i wanted to make a cake that was delicious, moist and flavorful.
so as a skilled baker and determined mom I blew through SO MUCH flour, butter, sugar…tweaking, failing, sorta-succeeding, failing again… until i achieved a pretty good cake. and it only got better. our first palatable cake was chocolate (still quite a fave), and then carrot cake. the carrot cake recipe got a LOT of practice bkz of a dear friend who can get enough ;) but the pièce de résistance was conquering the elusive bakery style white cake. and conquer it we did… it is so flippin’ good.
